Delicious 3-Ingredient Healthy Breakfast Recipes To Start Your Day Off Right

We all know that breakfast is the most important meal of the day, but most of us are on too much of a time crunch to give ourselves the proper nutrients our bodies need. These three recipes are a healthy way to start your day off right, and only take three ingredients.

Bacon and Egg Cups

Ingredients

12 organic eggs
12 pieces nitrate-free bacon
1 tbsp chopped chives
salt and pepper to taste

Instructions

Preheat oven to 400 degrees and grease your muffin tins. Cook bacon for about 8-10 minutes. Remove the bacon from pan while still pliable, not crisp. Cool on paper towels.

Put one piece of bacon in each hole, wrapping it around to line the sides. Crack the eggs into each hole and top with chopped chives. Salt and pepper to taste. Cook for about 12-15 minutes or until bacon is crisp. Watch closely.

Healthy Banana Pancakes

Ingredients

1 very ripe banana, mashed
2 eggs
1/4 teaspoon cinnamon
Optional (but highly recommended): 1/8 teaspoon salt

Instructions

Mash banana in a medium bowl. In a separate bowl, whisk together the two eggs, then add eggs to banana and whisk together until thoroughly combined. Whisk in salt and cinnamon.

Preheat a griddle or large skillet over medium heat. Spray griddle with cooking spray and use a tablespoon to drop batter onto griddle. Let sit for a few minutes, and then flip with a spatula. Cook for an additional minute or two on remaining side and remove to plate.

Easy Sweet Potatoes & Eggs

Ingredients

2 teaspoons unrefined coconut oil, or ghee
1 medium/large sweet potato or yam, washed + ends cut
3 large eggs
shredded goat cheddar cheese, or other sharp cheese
salt + pepper

Instructions

Julienne your sweet potato (or use the large holes on a grater). Heat a 9-10-inch skillet that is oven safe over medium and add your coconut oil. Once hot, place the sweet potato in the pan and stir frequently until done to your liking. About 8-12 minutes.

Set your oven to broil on high. Spread the sweet potato evenly around the pan and create 3 small wells for the eggs. Crack eggs one at a time and pour into each well. Let cook for about 2-3 minutes until the white just starts to solidify and turn opaque. Sprinkle with cheese and place under the broiler, watching closely, until eggs are cooked to your liking.

Sprinkle with salt and pepper, hold the pan at an angle over a plate, and slide out of the pan with a large metal spatula. Serve immediately.
