Homemade Florentine Cookies Recipe

Many people will have heard florentine cookies, which are also known as lace cookies, which are thin, crispy cookies. They can be difficult to make but they are packed with flavor.  The best part is that you can add just about any flavor or topping to these cookies for a sweet or savory dessert experience.

Here are the ingredients you will need for these florentine cookies:

  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract + 2 teaspoons milk
  • OR 1 tablespoon fruit juice/puree
  • ⅓ cup light brown sugar OR  white sugar
  • 2 Tablespoons flour (aka ⅓ cup cornstarch)
  • Pinch salt
  • 3 tablespoons ground almonds, if you‘ve got it
  • ½ cup chocolate chips, melted

Here are the directions you need to make homemade florentine cookies:

The first step is to heat the oven to 325F.

Then, you can whisk all of the dry ingredients (the flour, sugar, salt, almonds or whatever you want to put in the mix) into the wet ingredients (butter, vanilla, fruit juice) and combine everything together until smooth. Refrigerate batter 1 hour (or freeze for 10 mins if you don’t want to wait.)

Next, drop 1 teaspoon rounds of the batter onto a greased sheet pan about 4 inches apart and flatten slightly with the palm of your hand, or the back of a spoon.

Then, bake the cookies for 12 minutes until the batter has dropped and spread into a lacy round and it begins to caramelize in color. Let the cookies sit for 1 minute to cool slightly.

Remove the cookies carefully from the sheet pan and it is now that you can shape them into whatever form you want or just transfer them to a flat surface to cool completely.

Once the cookies are completely cool, you can spread the bottoms of each individual cookie with melted chocolate and let them set upside down before eating or storing.

Store in an airtight container in the fridge for up to 3 days.
